Cooking with Happy: Not Your Average Joe's

Cooking with Happy: Not Your Average Joe's

Rick Card owner of Joe’s Grill and Cantina in Ft. Smith, Arkansas is an ace at cooking up the best Tex-Mex in the River Valley. You may be new to the Joe’s name but chances are you’ve savored the flavor of his cooking before.  Joe’s Grill, formerly named Cuco’s and located in the old Phoenix Village Mall has been refining Tex-Mex cuisine since 1986.  Since Card’s restaurant debut in the 80’s with the Cuco’s franchise, he has relocated, dropped the Cuco’s name and now just calls the place Joe’s Grill and Cantina.

"This is the night, it's a beautiful night, and they call it Bella Notte." The very first Disney movie I ever watched was Lady and the Tramp.  Tramp knew the key to romancing Lady was a really good meal, and romance was in the air for the two lovepups.  However, thinking back I find myself asking, "Were they in love with each other, or were they really in love with the Spaghetti?"

What's Cooking with Happy: R. Landry's New Orleans Cafe

What's Cooking with Happy: R. Landry's New Orleans Cafe

Even Justin Wilson would have given western Arkansas' premier Cajun café kudos for their spot on Creole cooking. R. Landry’s New Orleans Café, located in historic downtown Ft. Smith, Arkansas, will have you believing you’re down in the low country sampling some old Cajun’s recipes that were handed down by his or her ancestors.

Don’t be mistaken though; the closest thing to a bayou near this spicy little restaurant is the Arkansas River, and it’s moving too fast to let you sit a spell and enjoy Landry’s many offerings.
